What is a Quiche

A Quiche is a traditional FrenchSavoury Tartmade from two elements:

How do you make a quiche from scratch?

There are SO many ways to make a quiche - whether you want to make it fully from scratch or use pre-made, store-bought elements like the Pastry.

Quiche Pastry

It is completely up to know whether you use a pre-made crust from the store, or make your own. I personally always make my own savoury shortcrust pastry from 4 basic ingredients:

  • Plain Flour
  • Salt
  • Cold Butter
  • Cold Water

Vegetarian Quiche Fillings

The most important ingredients needed to make veggie quiche recipes are obviously the vegetables! With so many options and ingredient combinations to make a healthy quiche, it is time to get creative!

Here are some of my favourite vegetables to use:

  • Cherry Tomatoes
  • Asparagus
  • Mushroom
  • Leek
  • Spinach
  • Zucchini
  • Pumpkin
  • Broccoli

FAQs

Should vegetables be cooked before putting in quiche? ›

Cook the Veggies First

"Vegetables will take longer to cook than your egg custard, so always sauté onions, steam broccoli, etc. before you add them to your egg mixture to ensure every bite of quiche will be perfectly cooked," says Kristin Beringson, executive chef at Henley in Nashville.

Is milk better than heavy cream in quiche? ›

Heavy Cream and Milk – For the best tasting quiche, use a combination of whole milk and heavy cream. (Or simply use half-and-half.) Using just heavy cream produces an overly thick filling. Whole milk is great, but a combo of heavy cream and milk is better.

Can you put too many eggs in a quiche? ›

Using too many eggs in the custard results in a quiche that rubbery and too firm when baked, while not using enough will prevent the custard from setting. Follow This Tip: Remember this ratio: 1 large egg to 1/2 cup of dairy.

Should I Prebake a pie crust for quiche? ›

And yes, as you'll see, you should always prebake quiche crust to avoid a gummy pastry. Preheat the oven to 450°F. Roll out your homemade or purchased refrigerated dough into a 12-inch circle.

Should spinach be cooked before adding to quiche? ›

You can cook it down ahead of time, or just add it fresh/raw. I use cooked-down fresh spinach in this goat cheese spinach & sun-dried tomato quiche. Milk: Whole milk is best for the creamiest texture, but 1/2 cup (120ml) each heavy cream and whole milk is fantastic, too, for an even richer filling.

Why does my quiche always have a soggy bottom? ›

Wet pie fillings + raw dough are a tricky combination. If the bottom crust doesn't set before the filling soaks in, it's going to be gummy. A metal pie pan placed on a preheated surface will set the bottom crust quickest; once cooked, the liquids from the filling above won't soak in, and as a result: no soggy bottom.

Can I substitute Greek yogurt for heavy cream in quiche? ›

If you're low on dairy ingredients, don't fret. Greek yogurt can substitute milk, sour cream and heavy cream. Milk: If you're short on milk, half and half or light cream, Greek yogurt can be used to make up for the difference.

Why isn't my quiche creamy? ›

Figuring out your proportions couldn't be simpler – for each egg you use, you need half a cup of milk. Too little dairy, and your quiche will be dry instead of creamy. Too much, and it won't set properly.

What can I use instead of pie crust for quiche? ›

  • Crispy Rice Cereal. A little peanut butter is all it takes to morph crunchy cereal into a moldable mix for a playful pie crust. ...
  • Waffle Cones. Scooping ice cream cones for a crowd might leave you wiping sweat (and ice cream drippings) off your brow. ...
  • Brownies. ...
  • Butter Crackers. ...
  • Shredded Coconut. ...
  • Puff Pastry.

Do you poke holes in pie crust for quiche? ›

Poking holes allows steam to escape

The reason for this, as The Spruce Eats explains, is that unless you create a place for the steam to escape, it'll get trapped within the dough. As a result, the crust will puff up and cause your pie to warp from the bottom.

Why is my quiche sunk in the middle? ›

Excess moisture is one reason why quiches collapse in a watery pool on your plate. Vegetables and meats like ham give off tremendous amounts of water when they're cooked. Therefore, if you're using vegetables in your quiche, it's imperative that you cook them first.

What is the formula for quiche? ›

Quiche Ratio: 1 large egg to 1/2 cup of dairy

You'll need to increase the amount of eggs and milk based on the size of your quiche, so knowing the basic ratio makes it really easy to scale up or down. For a standard 9-inch quiche: Use 3 large eggs (6 ounces) 1 1/2 cups of whole milk or cream (12 ounces)

Should you beat eggs for quiche? ›

BEAT eggs, milk, thyme and salt in medium bowl until blended. Carefully POUR over filling in pie shell. BAKE in center of 375°F oven until center is almost set but jiggles slightly when dish is gently shaken and knife inserted near center comes out clean, 30 to 40 minutes.

Why is my quiche watery in the middle? ›

Why does my quiche go watery? If your quiche appears watery it may just need to set for a little longer. The recipe may also contain too much dairy, so make sure that the recipe you are following has the ratio of 4 eggs to 1 cup dairy.

Why is my quiche always soggy? ›

Instead of using raw vegetables in quiche, the outlet recommends roasting or sautéing vegetables with a high moisture content before adding them to quiche: That way, they'll release the majority of their water before landing in the egg custard and reducing the chances that it will become soggy.

Why is blind baking important when making quiche? ›

For example, if you're making a quiche or frangipane, blind baking the crust first will help ensure the pastry case stays buttery and retains its crunch. This will elevate the overall taste and texture of your dish and stop any of the liquid seeping through.

How long should quiche rest before eating? ›

How long should quiche rest before cutting? Remove the quiche from the oven and let the inside continue to cook while the exterior cools to a warm temperature. Waiting about 10-20 minutes before slicing is usually sufficient.

Can you prep quiche the night before? ›

You can blind bake the crust up to a day in advance or bake the entire quiche 3 days before serving. In fact, quiche will slice more cleanly when baked in advance.
