It's perfect for summer because it's delicious served with a big scoop of vanilla ice cream. It's also great for cooler months, served warm.

This recipe is very simple. Just a handful of ingredients are needed and using store-bought crust saves lots of time. I have been asked a few times for my pie crust recipe. Well, it's Pillsbury's secret. Ha!

So, because I save time not actually making the crust, I spend that time making it look pretty! I love a lattice crust because it's really easy to do and looks nice but also vents the pie while it cooks so it's a win-in.

Here's everything you'll need:

  • You'll need fresh or frozen strawberries.
  • Red or green rhubarb.
  • Sugar. Regular table sugar is all you need.
  • Tapioca or pectin to thicken the filling. You can find this at most grocery stores, Amish markets or on Amazon.
  • Butter. Salted butter so no need to add extra salt. You can use margarine if you prefer but I do recommend butter.
  • Pie crust dough. Ready-made store-bought dough. I do find that Pillsbury dough tastes better and unrolls better but store brand is OK too if you're on a budget.
  • Egg yolk. If you want to egg-wash the pie crust for that beautiful golden finish. This also help prevent the crust from overcooking or drying out too much.

What color rhubarb is best?

You can use green or red rhubarb. Both taste amazing and create a pretty pie when combined with the strawberries.

Sometimes it can be difficult to find red rhubarb if it's not in season. But not to worry, usually the green variety is available all year long in the produce section and works just as well in this recipe.

Personally, I'm not a big pie person because they tend to be overly sweet so this is right up my alley. I like how the strawberries mixed with the rhubarb to give it some added flavor. I tried an all-rhubarb pie last year and thought it was too tart and didn't have a lot of flavor but some people I know really love it.

Ingredients

  • 1 cup sugar
  • ½ cup flour
  • 2 tbs tapioca
  • 2 ½ cups chopped rhubarb
  • 3 ½ cups chopped strawberries
  • Juice from ½ lemon
  • 2 tablespoon butter
  • 2 pie crusts
  • 1 egg yolk

Optional Topping

  • 8 scoops vanilla ice cream

Shop ingredients at Walmart.comAdd ingredients, then choose Pick Up or Delivery.

Instructions

  • Mix together sugar, flour and tapioca. Add rhubarb and strawberries; toss to coat. Add lemon juice and toss.

  • Place one pie crust in bottom of a shallow pie pan and add strawberry rhubarb mixture.

  • Dart with butter.

  • Add lattice top and brush on egg yolk to coat evenly. How to make a lattice pie crust.

  • Loosely cover with foil and bake at 400˚ for 25 minutes. Remove foil and bake an additional 10 minutes or until top is golden brown and filling is gently bubbling.

  • Let cool then serve.

Notes

To prevent crust from getting soggy it's best to use a thickening agent for the filling. Tapioca or pectin both work well. Tapioca works a bit better from my experience.
